Sometimes we get a little too ambitious with our #HealthGoals, and we go crazy stocking up with veggies. But then reality happens, and we might eat a few more frozen pizzas than salads in our week. If you have a bunch of vegetables that you aren't going to be able to eat before they go bad, try baking them into some fun desserts!

The Best Zucchini Bread

As a kid, I always thought I loved zucchinis because I had only ever had zucchini bread. Boy was I surprised to find out the the actual vegetable did not taste like sweet, buttery goodness! This recipe is great because you can just to make a loaf of bread or muffins, whichever you are in the mood for. You can also choose to use chocolate chips or raisins and nuts. The world is your zucchini bread!
