Beyond the Burger

It's All About Family

It’s not just business; it’s family for Red Cow Owners Tracy Bachul and Luke Shimp along with sons Michael, Director of Finance, and Peter, Controller, who all share the love of a good burger.  The popular, neighborhood restaurant started on those very premises, creating a family legacy.

Celebrating seven years in business with their first Red Cow location on 50th & France in Edina this year, the vision of creating a welcoming, neighborhood restaurant at their own kitchen table quickly became the biggest family they could have ever dreamed of.  Now, with four Red Cow locations throughout the Twin Cities (others you can find in Uptown, North Loop and St. Paul) and an additional Italian concept, Red Rabbit, with two locations (North Loop and St. Paul), business is booming and the Red Cow and Red Rabbit family are growing. “We value relationships and our talented leaders and staff are just like family to us,” says Bachul. “We all work together supporting and celebrating each other.”

You will find at every location a warm, friendly and relaxed atmosphere that feels just like being at home. “We wanted to create a place that friends and family could gather and enjoy a good meal together, just like being around a family kitchen table,” says Shimp.

Each location is chosen with purpose. Finding a great neighborhood in the Twin Cities and to have parking available. This makes it easy for customers to stop in for lunch, happy hour, dinner or a quick bite without a hassle.

The menu doesn’t bring a selection of ordinary burgers; it brings creative, flavorful creations to the table. Long-time friend and Culinary Director, Trevis Langley, knows burgers and has stepped up the burger game with the Red Cow signature 60/40 burger and creation of the award-winning Double Barrel burger. Both burgers are worthy to be on your must-try list. You will also find other delicious award-winning menu items such as the turkey burger and chips & onion dip. And of course, plenty of plant-based options such as the So Cal burger made with an Impossible™ patty, a variety of salads and the Buffalo Cauliflower.

Not only does Red Cow bring the burgers, it also brings a fantastic cocktail and wine selection. A thoughtfully curated wine and cocktail menu was created to pair nicely with the menu from the classics to custom cocktails, and a wide-ranged flavorful wine variety. There’s something for everyone to compliment a meal.

As a family-run business philanthropy is also a big part of this legacy. “We always want to give back to the community,” says Bachul.  “It’s important that our customers know how much we value their business and that we do our part to give-back.” Every year Red Cow donates over $100,000 to local charities and communities such as the University of Minnesota Masonic Children’s Hospital, The Aliveness Project, and local schools and sports teams.

“We are excited for the future and what that holds,” says Shimp. “Being able to bring more neighborhoods a fun, inviting place to gather, while enjoying a good meal.”
