After traveling the globe and mastering a variety of cuisines, Brad Brutlag landed right here in Parker when he won the Food Network's Great Food Truck Race. His Big Stuff Food Truck can be found at different locations around the state serving up his famous Colorado Comfort Food. He uses as many locally sourced ingredients as possible to fuse global cuisine with southwest flavors, which give his delectable dishes a distinctive Colorado flair. The Big Stuff Burger will be perfect for Father's Day, but you might not be able to wait that long to try it.
The Big Stuff Burger
The Meat Blend
I use the perfect blend of Locally Raised Bison, Chorizo made by Boulder Sausage Company and Ground Beef
For the Chipotle Cheddar stuffing
1 lb Shredded Cheddar Cheese
1 cup Mayo
1 Clove Garlic minced
1/3 cup diced onion
1 large Chipotle in Adobo Minced
1 ½ tsp Adobo Sauce
Salt and Pepper to taste
Mix all ingredients together, crushing with your hands.
Portion Meat into 3.5-4 oz balls, place the meat between 2 pieces of parchment paper. Using a rolling pin roll out the meat into thin ¼ inch thick rounds. Place ½ a cup of cheese in the center of one round and top with another round of meat. Fold sides up and seal the cheese inside.
This burger is cooked best in an iron skillet or flat top grill. Cook until cheese is hot and melty on the inside. Top with your favorite bacon, grilled onions and a slice of cheddar cheese. Serve on a brioche bun with lettuce and tomato or your favorite burger toppings.
