Blackened Salmon with Crab Fried “Rice"

Blackened Seasoning

·      1 tablespoon smoked paprika

·      1.5 tablespoons garlic power 

·      1.5 tablespoons onion powder 

·      1 teaspoon of sea salt 

·      1 teaspoon dried thyme 

·      1 teaspoon oregano 

·      1 teaspoon black pepper 

Soy Ginger Sauce 

·      6 tablespoons low-sodium soy sauce

·      2 tablespoon rice vinegar

·      2 teaspoons of  honey

·      1 teaspoon of sriracha(if you do not like spice, you can omit this)

·      2 tablespoons of minced garlic

·      2 teaspoons grated ginger or ground ginger

Instructions

1.     Combine all dry seasoning. Season both sides of 4 salmon filets then set aside. For best results store in the refrigerator and marinate salmon for 30 minutes

2.     Combine all ingredients of soy ginger sauce in a saucepan, bring to a boil and set aside\. 

3.      Preheat your oven to 425 degrees. Then grab a cast-iron skillet or other nonstick skillet that can go into the oven. Pour 1 tbsp of olive oil into the skillet and let the skillet heat on high until the pan is super ho

4.     Place the salmon skin-side up into the hot skillet. Let cook for about 3 minutes. . When the salmon turns opaque on the sides use a spatula to flip the salmon so that it is skin-side down. Place the skillet immediately into the oven and let cook for 6 minutes Remove from the oven. Let rest 4 to 5 minutes

Crab Fried "Rice"

1 Head of Cauliflower, Riced (Frozen works as well)

10 oz Lump Crab meat or whatever your budget allows

3 Springs of Green Onion

1/2 Yellow Onion (Chopped) 

1/4 Cup Low Sodium Soy sauce

1 Tablespoon  Minced Garlic 

1 Tablespoon Sesame Oil

1 Tablespoon  Old Bay Seasoning

1 Tablespoon Onion Powder 

1 Tablespoon Garlic Powder 

½ Teaspoon Salt and Pepper 

Olive oil 

1. Heat olive oil on medium heat. Add yellow onions, green onions, and garlic. Stir occasionally for 5-8 minutes or until vegetables turn translucent.

2. Add Cauliflower "Rice," remaining ingredients (except crab), and adjust temp to medium high. Stir frequently for 5 minutes and return heat to medium. 

3. Add crab meat and toss lightly. Allow it to cook for an additional 5 minutes. Top crab fried rice with the ginger soy sauce , place salmon fillet on top of rice, and garnish with parsley.
