Since opening its doors in 2013, Schram Vineyards has become a cherished destination in the Waconia area, offering award-winning wines and stunning views in a rustic-chic setting. Over the years, the original building has served as a jack-of-all-trades: tasting room, kitchen, production facility, and event space. But as the vineyard’s popularity soared, so did the need for more room to breathe.
Now, just in time for the holidays, Schram Vineyards is proud to unveil an ambitious expansion: Bonfire and Barrel Lounge, a new restaurant and gathering space designed to elevate the guest experience while staying true to the vineyard’s roots. This expansion also includes a wine bottle shop, curated gift shop, expanded tasting room, and educational space—all crafted with intentionality, warmth, and a deep sense of community.
The name “Bonfire and Barrel” draws inspiration from Schram’s popular Bonfire red wine and its annual Harvest Bonfire event. “Bonfire” evokes connection, comfort, and celebration, and “Barrel” pays homage to the vineyard’s winemaking heritage.
The new building will open in phases. The bottle shop and gift shop are expected to open by October, followed by expanded tasting experiences. Bonfire and Barrel Lounge will begin soft openings in late October, with a full launch planned for early November.
While Schram has always offered food, this new space marks a natural evolution.
“We’ve wanted to expand our menu, increase seating, and create a more efficient layout for years,” says Ashley Schram, owner. “This new space allows us to do just that—with table service, a full bar including liquor, bar seating, and a cozy fireplace.”
Bonfire and Barrel will feature soft seating, TVs for sports viewing, and a warm, inviting atmosphere perfect for any occasion—whether it’s a girls’ night out, date night, family dinner, birthday celebration, or just watching the game. The menu includes brick oven pizzas, burgers and sandwiches, salads and soups, signature skillet plates, brunch offerings, appetizers, shareable boards like charcuterie, and house-made desserts. Seating is first-come, first-served, and if the lounge is full, guests can still order from the patio menu in other areas.
The original 2013 building, now called the Vineyard Lodge, will continue to host events and be available for private gatherings and weddings. Live entertainment will remain in the Vineyard Lodge, which was designed with acoustics in mind.
“We knew early on that growth was inevitable,” says Ashley. “After purchasing 20 acres to the east last year, we finally had the space to bring our vision to life.”
The design of Bonfire and Barrel blends rustic vineyard charm with modern touches—wood accents, large windows, patio doors, and cozy seating that invites guests to linger. It’s a space for all ages, and families are welcome.
Beyond the restaurant, the bottle shop is a key part of the expansion.
“We wanted guests to interact with the bottles—not just see them behind the bar,” Ashley says.
The new shop offers ample space for browsing, and the adjacent gift shop features Schram apparel, wine accessories, home décor, and more.
Looking ahead, Schram Vineyards has exciting plans in the works. A Social Club membership program is launching soon, offering discounts and exclusive perks. A micro-distillery is slated for 2026, and a new deck will be added to the Vineyard Lodge. Long-term plans include a sparkling wine facility.
“Our mission has always been to create quality products paired with memorable experiences,” Ashley says. “Seeing a long-time vision become reality and knowing it adds something special to our community is incredibly rewarding.”
