Breakfast for Dinner

End the Day with the Most Important Meal

There is nothing better on a busy week night than surprising the family with breakfast for dinner. These recipes are as fun as they are easy. Breakfast Quiche combines all the goodness of a hearty breakfast into a savory, cheesy pie. Pancakes always are a hit. With an easy Chocolate Chip Pancake Bake - forget the griddle and the endless flipping. Just mix and bake! And once you've tried easy Air-Fryer Breakfast Potatoes, they will become a staple in your weekly menu. So grab the OJ and maple syrup and enjoy the most important meal of the day - at dinnertime! 

Breakfast Quiche

Ingredients

1 uncooked pie crust (store bought or your favorite recipe)

1 pound breakfast sausage, cooked and crumbled

½ sweet onion, finely diced

1 1/2 cup fresh chopped spinach (Optional – but a good way to sneak in some veggies!)

1 ¼ cup shredded sharp cheddar cheese

4 large eggs

1 cup half & half

Salt & freshly ground black pepper (to taste)

Finely chopped fresh chives for garnish. (Optional)

Instructions

Preheat oven to 400 degrees.

Sauté onion on medium heat until translucent – about 5 minutes.

Place pie crust into pie pan and top with crumbled sausage, onion, cheese and spinach.

In a bowl, whisk together the eggs, half & half, salt and pepper.

Pour egg mixture into pie crust – over the sausage, onion & cheese mixture.

Bake for 15 minutes. Reduce heat to 350 and bake an additional 35 minutes – until the quiche is golden brown and set.

Slice and top with a sprinkle of fresh chives.

Note: This recipe is so flexible. Try adding mushrooms and different cheeses for a twist. 

Chocolate-Chip Pancake Bake

Ingredients

2 cups complete buttermilk pancake mix

1 1/3 cups water

2 tsp pure vanilla extract

½ cup mini chocolate chips plus more for garnish

Instructions

Preheat oven to 350 degrees.

In a medium mixing bowl, combine pancake mix, water and vanilla. Let rest for about 10 minutes.

Pour into well-greased baking dish.

Sprinkle chocolate chips on top.

Bake for about 25 minutes – until golden and set. A toothpick inserted into the middle should come out clean.

Cut and sprinkle with chocolate chips (because more is more when it comes to chocolate).

Air-Fryer Breakfast Potatoes

Ingredients 

4 cups/1 package refrigerated, diced potatoes with onions (we use Simply Potatoes brand)

1/2 tsp salt (more can be added after cooking if needed)

¼ tsp freshly ground black pepper

1/2 tsp garlic powder

½ tsp paprika or smoked paprika

1 Tablespoon avocado oil

Instructions 

In a large mixing bowl, toss potatoes, oil and seasonings until all of the potatoes are coated.

Set air fryer to 400 degrees and let preheat for 2 minutes.

Spray inside of air fryer with cooking spray.

Add potatoes and cook for about 20 minutes – stopping every 5 minutes to shake/turn them.
