Final Gravity BrewPub Blends Craft Beer, Family, and an Americana Spirit

For Ted Dougherty, brewing began as a hobby. After 11 years of home brewing, a career in law enforcement, and service in the U.S. Army, Dougherty turned his passion into a business. He and his wife opened Final Gravity BrewPub in 2025, with their daughter, Ashley, serving as taproom manager.

“Everyone kept telling me since I gave away beer in my garage for so long that I should open my own brewery,” Dougherty says.

Final Gravity sells every beer it brews exclusively on-site.

“We don’t ever plan on distribution,” Dougherty says. “Everything we do is going to be sold in-house. We’re a small brewery focused mainly on the taproom. We just want a place where people can come in, sit, and have a good time.”

The brewpub’s name comes from final gravity, the measurement used to determine a beer’s density after fermentation. Many of its beers carry patriotic names inspired by Dougherty’s military service and love of country, including Battle of Saratoga and 1776 Blackout.

Nine beers are available on tap, with selections including pilsners, stouts, brown ales, and sours. The recipes were developed in Dougherty’s garage before reaching Final Gravity’s taps.

While craft beer is at the center of the business, the family envisioned Final Gravity as something more: a welcoming gathering spot for guests of all ages. Its Americana-inspired decor and laid-back atmosphere create a setting for families, friends, and visitors.

The kitchen serves pizza, wings, pretzels, and other casual fare, with food trucks available when the kitchen is closed.

The brewpub’s schedule features live music, bingo, trivia, painting events, and more, plus board games, electronic games, and outdoor games.

Final Gravity’s connection to military service is also reflected in its coin wall, where patrons can purchase a beer in advance for a veteran, offering a simple way to show appreciation and reinforce the brewpub’s emphasis on service and community.

At Final Gravity, the goal is simple: good beer, good company, and a welcoming place to relax, connect, and enjoy time together.
