The Basket Ball Social House Bananas Foster Pancakes
BUTTERMILK PANCAKES
Ingredients
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 cup buttermilk (or 1 cup milk + 1 tablespoon vinegar or lemon juice, rested 5 minutes)
- 1 large egg
- 2 tablespoons melted butter
Directions
- Whisk together flour, sugar, baking powder, baking soda and salt.
- In a separate bowl, whisk buttermilk, egg and melted butter.
- Fold wet into dry until just combined. A few lumps are fine.
- Cook on a lightly greased griddle over medium heat, about ¼ cup batter per pancake, until bubbles form and edges set. Flip and cook until golden. Keep warm.
BANANAS FOSTER TOPPING
Ingredients
- ¼ cup (½ stick) unsalted butter
- 1 cup packed light brown sugar
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- ¼ teaspoon ground nutmeg
- 4 ripe bananas, peeled, sliced lengthwise, then halved
- ¼ cup dark rum
Directions
- Melt butter in a large skillet over medium heat. Add brown sugar, cinnamon, salt and nutmeg. Cook, stirring, until sugar dissolves and mixture is smooth and bubbly, 2–3 minutes.
- Add bananas in a single layer. Cook 1–2 minutes, spooning sauce over them, until slightly caramelized but still holding shape.
- Carefully pour in rum. Simmer 30–60 seconds until alcohol cooks off and sauce is thick, glossy and fragrant. Keep warm.
NUTELLA DRIZZLE
Ingredients
- ½ cup Nutella
- ½ cup hot water
Directions
- Whisk together until smooth and pourable.
TO SERVE Stack warm pancakes, spoon bananas and sauce over the top, drizzle generously with Nutella. Finish with powdered sugar and whipped cream if desired, and blue and yellow sprinkles to celebrate!
