Veggies are an investment in your health and those to whom you serve them

How about a refreshing spring vegetable salad with a side of roasted asparagus filled with antioxidants and anti-inflammatory properties? A perfect, healthy dish for any celebration, dinner party or spontaneous gathering.  

Salad ingredients:

Mixed salad greens (lettuce, spinach, arugula)

Cherry tomatoes, halved 

Cucumber, sliced 

Radishes, thinly sliced 

Avocado, diced 

Fresh herbs (parsley, basil, or dill), chopped 

Lemon vinaigrette dressing (mix lemon juice, olive oil, salt, and pepper)

Ingredients for Roasted Asparagus:

 1 bunch asparagus, woody ends trimmed 

Olive oil 

Salt and pepper to taste 

Lemon zest (optional) 

Instructions:

Preheat the oven to 400°F (200°C)

Prepare the asparagus

Place trimmed asparagus spears on a baking sheet. Drizzle with olive oil and season with salt and pepper. Toss to coat evenly.

Roast asparagus in the preheated oven for 10 to 15 minutes or until tender and slightly crispy.

In a large bowl, combine the mixed salad greens, cherry tomatoes, cucumber slices, sliced radishes, diced avocado and chopped fresh herbs.

Make the lemon vinaigrette: In a small bowl, whisk together lemon juice, olive oil, salt, and pepper to taste.

Drizzle the vinaigrette over the salad ingredients and toss gently to coat evenly.

Arrange the salad on plates or in a serving bowl and pair with a crisp white wine.

Serve the roasted asparagus on the side. Optionally, garnish the asparagus with lemon zest for extra flavor.
