Chef Lindsay's Heirloom Tomato & Burrata Salad Recipe

Makes: 4 Servings Preparation Time: 15 Minutes

You will need:

  • 4 cups heirloom vine tomatoes
  • 3⁄4 cup kalamata olives 2- 8 oz. whole milk burrata cheese
  • 6 ounces basil fresh basil pesto
  • 4 ounces balsamic glaze
  • 1 cup arugula
  • salt & maldon salt

1) Slice tomatoes into 1⁄4 pieces and place in a large bowl.

2) Slice olives into thin rounds and place in the bowl with the tomatoes. 3) Mix tomatoes and llives with 3 ounces of balsamic reduction & 4 ounces of Pesto in a bowl.

4) Place 1/4 cup of arugula flat on each plate.

5) Spread 3⁄4 cup tomato mix on top of arugula over each plate.

6) Slice Burrata in half with the inside facing up to keep contents from spilling out.

7) Using 1⁄2 of each burrata per salad, slice each 1⁄2 ball into 3 pieces and spread along the top of the tomatoes.

8) Drizzle remaining basil pesto & balsamic over the top of the burrata and tomatoes.

9) Sprinkle in Maldon salt and pepper.

10) Top each with Micro Basil and edible flowers if you have across the top to garnish.
