Origin / Inspiration: The bone-in Kansas City strip is one of the most mouthwatering cuts of steak on the market today. As the bone cooks at a high temperature, it slowly releases flavors that can only be found in the marrow and other layers of the bone. I chose to put this on Cattle Shed's menu with the espresso rub because I thought the seasoning was unique and different. The espresso and chili powder add a depth of flavor that enhances the natural flavors of the steak.

Name of Dish: Roll-Your-Own Angel Hair Noodle

Origin / Inspiration: Our roll-your-own angel hair noodle dish comes with a platter of grilled meat of your choosing (pork, beef, shrimp, or betel leaf rolls). You then roll your own spring rolls with fresh Asian herbs, sliced cucumber, pickled radish and carrot, and fresh steamed rice noodles in a piece of rice paper. The roll is then dipped in a flavorful fish sauce, which is a very traditional Vietnamese dipping sauce.

Name of Dish: Truly's French Toast 

When it hits the menu: This fan favorite has been on the menu since September 2019.

Origin / Inspiration: The original Truly's French Toast was created by Truly Worthy at the end of the summer in 2019. Truly was a 12-year-old girl with an amazing passion for all things delicious. Her original recipe was inspired by her mother's brown sugar cream stuffed french toast. A true gem was discovered and now it serves as a staple on RTC's permanent menu. The dish is in loving memory of Truly. She will always be an inspiration to RTC.

Origin / Inspiration: Lamb chops are a classic dish with a lot of potential for creative expression. Our Turkish twist cuisine offers a rich tapestry of flavors that can beautifully complement lamb chops. Here is how we infuse lamb chops with Turkish flair. Lamb chops are rubbed with a blend of Turkish spices including paprika, oregano and salt, cooked to perfection to the customer's choice (medium-rare, medium, well-done or chef's style), served with the chef's special salad with house dressing, rice and house tzatziki, with an option of roasted vegetables. It goes very well with most of your favorite red wines. You are sure to love it.
