A Chili for Chilly Days

Lamb & beef poblano chili

Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 2 yellow onions
  • 6 garlic minced garlic cloves
  • 1 pound ground lamb
  • 1 pound lean ground beef
  • 4 poblano peppers, seeded and chopped
  • 2 tablespoons of chili powder
  • 1 tablespoon smoked paprika
  • 2 teaspoons of ground cumin
  • 2 teaspoons of salt
  • 3 cups of beef stock
  • 1 28-ounce can of crushed tomatoes
  • 1 6-ounce can of tomato paste
  • fresh green onions, sliced, for topping

Instructions

In a large skillet, heat olive oil until shimmers. Add onions and cook until nearly translucent. Stir in garlic and cook until fragrant. Add lamb and beef and cook, breaking it up consistently until browned. 

Transfer the lamb and beef mixture into a crockpot and add the sliced poblano peppers, chili powder, smoked paprika, cumin, salt, broth, tomatoes, tomato paste and stir until combined.

Cover and cook until thickened (5 hours on low or 3 hours on high). Top with green onions and enjoy!
