Chocolate Chip Hemp Seed Banana Bread


Nonstick cooking spray

4 very ripe, medium-sized bananas

6 tbsps unsalted butter, melted

1/3 cup plain Greek yogurt 

1 cup light brown sugar

2 large eggs

2 tsp vanilla extract

1 cup all-purpose flour

1 cup whole wheat flour

1 1/2  tsp baking soda

1/2  tsp fine sea salt

1 cup dark chocolate chips 

3/4 cup lightly toasted, chopped pecans, walnuts, or almonds (optional)

3/4 cup hemp seed


Preheat over to 350 degrees. Lightly grease 2 loaf pans with non-stick spray.

In an oversized bowl thoroughly mash bananas completely using a fork. Whisk in melted butter, yogurt, brown sugar, eggs, and vanilla until well combined.

In a separate, medium-sized bowl, whisk both the all-purpose and whole wheat flour, baking soda, hemp seed, and salt to combine. Add the flour mixture to the banana mixture and stir to combine, scraping the sides of the bowl to make sure the mixture is combined well.

Gently stir in the chocolate chips until combined, add nuts and stir until combined.

Transfer loaf pans to the oven and bake until the edges of the loaf start to pull away from the edge of the pan, about 60-70 minutes.  Insert a tester into the center of the bread. It should come out clean with just a few moist crumbs attached.  

Remove from oven, set on wire racks and cool before removing from the loaf pan.
