Cilantro Lime Grilled Chicken

Grilling season has officially begun! During the heat of the summer, most of us are longing for lighter, healthier meals that are full of flavor. This recipe for Cilantro Lime Grilled Chicken will surely fit the bill. It was adapted from Recipe Tin Eats. At only 300 calories per chicken breast, there is zero guilt. 

Ingredients

  • 5 boneless chicken breasts (can substitute with boneless thighs)

  • 1 lime, sliced 

  • 1 jalapeno, diced (optional)

  • 1 tablespoon fresh chopped cilantro, for garnish

For the marinade:

  • 3/4 cup light olive oil

  • zest and juice of two limes

  • 2 tablespoons brown sugar

  • 1 tablespoon soy sauce

  • 4 to 5 cloves garlic, chopped

  • 1/2 bunch cilantro

  • 1 teaspoon kosher salt

  • 1 teaspoon black pepper

Directions

+ Trim the chicken breasts of any excess fat. Pound down the thickest part of the breast. In a sealable bag, mix together the ingredients for the marinade. 

+ Add the chicken to the bag. Close bag and squeeze to coat the chicken. Allow to marinate for at least an hour in the fridge. 

+ Fire up the grill on low. Place the marinated chicken on the grill. Allow to cook through. Once the chicken breasts have reached an internal temperature of 160°, turn up the heat to sear on both sides. Searing will increase the acceptable serving temperature to 165°.

+ Place finished chicken on a platter. Garnish with the fresh lime slices, diced jalapeño and chopped cilantro. Serve and ENJOY with your favorite summer salad! 

+ Alternatively, make the Cilantro Lime Grilled Chicken as kabobs. Cut the chicken into skewer-sized pieces prior to placing in the marinade. Be sure to soak the skewers for at least fifteen minutes to an hour prior to grilling!
