NARWHAL:
1.5 oz Knob Creek Rye
.5 oz Novo Fogo Barrel Aged Cachaca
1 bar spoon Carpano Antica reduction*
1 dropper Olympic Mystic Bitters Blend*
Directions:
Add all ingredients to a mixing glass and briefly stir with ice. Strain over a large cube and garnish with a lemon twist.
Carpano Antica Reduction:
1 L Carpano Antica vermouth
1 cup white cane sugar
(Yield: appox. 20 oz
Shelf-life: 10 days, refrigerated)
Directions:
Empty bottle of vermouth into sauce pan and heat until boiling. Lower heat to a steady simmer. Let the volume reduce by half (16 oz). Once reduced, add sugar into pan and stir until dissolved. Bring back to a steady simmer for 2-3 minutes. Let cool, date, and refrigerate.
Olympic Mystic Bitters:
2 bottles Angostura bitters (6.7 oz)
2 bottles Scrappy’s chocolate bitters (5 oz)
1 bottle Peychaud’s (10 oz)
1 bottle Bittermens Tiki bitters (5 oz)
(Yield: 38.4 oz
Shelf-life: Indefinite)
Directions:
Pour all bitters into non-reactive container. Label and store in a cool, dark place.
