Cafe Cesura Adds Flavor to the Eastside

Cafe Cesura has been serving up coffee in Downtown Bellevue since 2011.  The owner, Shawn Nickerson, believes that coffee represent the communities where they are cultivated, and Café Cesura strives to present them in a worthy way.  “We source, roast, and brew our coffees with love.”
 

The café sets itself apart from other Eastside coffee shops with an industrial modern vibe, which makes for a perfect backdrop for local artists to display their work.  Nickerson rotates hanging art monthly, which gives new artists an opportunity to showcase their talent, as well as help keep repeat customers entertained while sipping on their favorite brew.

Most recently, Café Cesura has begun roasting their own coffee beans and selling wholesale to local businesses.   The learning curve was steep, but thankfully I found inspiration and mentorship with Philip Meech, owner of Caffe Lusso,” said Nickerson.  The coffee beans used for roasting are sourced straight from the farm as much possible; Nickerson has been working with Sergio Dias, a friend and coffee farmer in Brazil for years.  The flavor profile Nickerson aims for is a medium roast which entails roasting the coffee until the sugars have slightly caramelized.
