Cranberry Goat Cheese Truffles

  • 16 oz package goat cheese 
  • 12 oz package cream cheese 
  • 1/2 C pecans
  • 1/2 C dried cranberries
  • 1/8 C minced parsley
  • 3 Tbsp local honey 
  • 1 tsp cinnamon


  • Mix goat cheese, cream cheese, honey and cinnamon in a large bowl with hands until smooth.
  • Pulse pecans into small bits.
  • Pulse dried cranberries into small bits.
  • Mince fresh parsley. 
  • Combine parsley, cranberry and pecans. 
  • Roll 1 oz portion of goat cheese mixture into smooth ball.
  • Roll cheese balls in parsley-cranberry-pecan mix. Keep refrigerated.
  • Drizzle with honey and a pinch of minced parsley when serving.

For Chef Chuck Thomas, food is a labor of love. Despite getting a degree in multimedia production and art, then spending a few years as a mason, food was an industry in which he could focus on making people smile. He started at Taco Bell, then worked at the Compass Group and Blue Star Group before breaking off on his own. Chuck and his wife, Mary Ann, started Munchies719 (elevated comfort food) as a food truck and expanded to a storefront partnership in February.
