Creamy Roasted Elote Dip

Classic street corn flavor transformed into the perfect creamy dip.

This summer favorite is a must-have for parties, family gatherings, or whenever you need a little crunch. Fresh corn, both boiled and roasted, adds just the right amount of sweet, charred bite. Combined with bold southwest spices and fresh flavors, this dip is guaranteed to have everyone coming back for seconds. Served chilled or warm, it pairs perfectly with tortilla chips, tacos, grilled meats, or as a flavorful side dish for any backyard barbecue or festive summer celebration.

Ingredients:

4 ears of fresh corn

4 ounces cream cheese (room temperature)

1/3 cup mayonnaise

1/3 cup sour cream

4 tablespoons minced yellow onion

3 tablespoons chopped cilantro

2 tablespoons tajin

2 tablespoons fresh lime juice

2 tablespoons freshly grated parmesan cheese

1 teaspoon chili powder

1 teaspoon sea salt

3/4 teaspoon granulated garlic

1/2 teaspoon smoked paprika

1/2 teaspoon fresh ground black pepper

Instructions:
1. Peel off the corn husks and remove any strands.

2. Place the cork and the tajin seasoning in a cold pot. Fill with enough water for the corn to float freely and cover with a lid.

3. Bring to a boil on medium high heat. Once boiling reduce to medium heat and cook for 10 minutes.

4. While the corn is boiling set the cream cheese on the counter and set your oven to broil on high heat.

5. Remove the corn from the pot and place on a sheet tray lined with a cooling rack.

6. Place the corn under the broiler and rotate (every minute or two) until all sides are charred. Remove and allow to cool slightly.

7. In a large bowl add the rest of the ingredients.

8. Carefully cut off the corn kernels from the warm cob and place into the bowl.

9. Mix everything together until well incorporated.
