INGREDIENTS 

For the vinaigrette

  • 3 tablespoons 18-year-old traditional balsamic vinegar
  • 5 tablespoons Tuscan herb olive oil
  • 1/2 teaspoon sea salt

For the salad

  • 4 cups salad spring mix
  • 48 slices herb-crusted salami, thinly sliced
  • 2 yellow bell peppers, sliced into rings
  • 1 pint pear tomatoes, halved
  • 1 English cucumber, sliced into rounds
  • 1 cup Delizia garlic-stuffed olives
  • Yellow cheese slices, cut into small flowers with a cookie cutter
  • 2 tablespoons Divina black olive spread

DIRECTIONS

  1. Make the vinaigrette: In a small jar, combine the balsamic vinegar, olive oil and sea salt. Whisk or shake until well blended. Set aside.
  2. Make the salami roses: Bring the salami to room temperature. Fold the slices halfway over the rim of a drinking glass, slightly overlapping each slice. Continue layering until the rim is completely covered, gently pressing the slices together as you go. Invert the glass into your palm and gently shake the rose free. Refrigerate until ready to assemble.
  3. Arrange the spring mix on a large serving platter to form a bed of greens.
  4. Place the Día de los Muertos mask in the center of the platter. Cover the eye openings with cucumber rounds topped with tomato halves and olive slices.
  5. Arrange the yellow pepper rings and salami roses above the mask to create a decorative display.
  6. Scatter the remaining cucumber, tomatoes and olives around the mask.
  7. Place a small dollop of black olive spread in the center of each cheese flower and tuck the flowers around the mask.
  8. Serve immediately with the vinaigrette on the side for guests to drizzle over their salads.

Note: Use a clean, food-safe decorative Día de los Muertos mask (find one on Amazon.com and elsewhere).
