Dad's Day Dinner

Let’s face it - Dads just do some things better. And often those things involve a bit of bourbon and some good eats. The following crowd-pleasing recipes taste like they're made with a lot of effort, but couldn’t be simpler!  Then it will be time for one more thing Dads can definitely get on-board with - a well-deserved nap. Happy Father's Day!

BLT – Bourbon, Lime + Tonic

Cool and refreshing this cocktail will be an instant hit!

Fill a rocks glass with crushed ice
Add a shot of bourbon {Dad’s preference} 
Juice of one lime wedge and a lime
Top with tonic to taste
Stir
Garnish with additional lime as desired

Cerveza Carnitas

Cerveza por favor especially in when it turns out this juicy!

Place 4 pounds of pork butt, cut into 3 large chunks in crockpot
Add one diced white onion
1 tablespoon chili powder or chipotle chili powder
2 teaspoons both oregano and cumin
1 teaspoon kosher salt
Zest and juice of one navel orange
Slowly top with one 12-ounce beer- preferably Blue Moon and stir slightly to combine spices
Cook on low for 6 hours, high for 4 hours
Once pork is cooked, shred pork using two forks and place on sheet pan. Add ¼ cup- ½ cup of liquid from crockpot to the pan. Place under broiler until edges are crispy and delicious (5-6 minutes). Serve with your favorite Mexican accompaniments - items for tacos, burritos, nachos, quesadillas or bowls. For a quick change up, try sour cream and BBQ sauce instead of salsa in your taco.
