Here’s the thing about making baked goods, especially exceptional ones: you’ll always make fast friends, no matter where you go. So when Babettes left its tiny spot inside Denver’s the Source food hall at the end of 2018 and made the move up to Longmont’s Prospect neighborhood, they weren’t lonely for long. (Adding wood-fired Neapolitan pizzas to the mix didn’t hurt either.)
“They’ve embraced it so much,” Babettes Pizza & Pane co-owner Catherine Scott says of Longmont. “We’ve been really fortunate to have people come from all over, customers driving up even from Castle Rock.”
It’s no wonder—the pastries and pizzas coming out of Babettes are destination-worthy, whether you’re venturing from across the metro area or across the street. Wife and husband team Catherine and Steve Scott have been in it together since the beginning, with each contributing complementary skills to keep the business humming. Catherine is the numbers and people person, while Steve is an incredibly talented baker.
“I can’t imagine doing this alone,” she says. “We both have different strengths and very different approaches to things. That’s why we’re such a good team. He’s so good with food, he can take anything and make it great. I always wanted to see him doing exactly what we’re doing here, and it’s been a lot of fun.”
Moving the bakery to Longmont was an easy decision for the couple, as that’s where they’ve lived for years. Besides the easier commute, it offered them more space to add the pizzeria, and it’s a good thing—the world needs this char-bubbled, crispy-chewy, sourdough crust. While the dining room is still closed due to COVID, the pizzas, French pastries, Italian prepared meals, and well-caramelized, custardy loaves of bread are all available for takeout.
“The bakery has been doing amazing through the virus,” Catherine says. “When the virus hit, a lot of people came up to visit and support us because they had the time to make the trip. It’s great to support the local businesses you want to support.”

The bakery is open Wednesday 8 a.m.-6 p.m., Thursday 8 a.m.-7:30 p.m., Friday-Saturday 8 a.m.-8 p.m. and Sunday 8 a.m.-7 p.m.
Takeout from the pizzeria and kitchen is available Thursday 3-7:30 p.m., Friday 3-8 p.m., Saturday 1-8 p.m., and Sunday 1-7 p.m.
