Ridiculously Big Salad
When you think about bears you often think about how they are ferocious hunters hunting deer and catching 20-pound salmon with bare paws, but what you might not realize is that bears are omnivores. Their diets consist of grasses, roots, and berries. I learned about this diet when I wanted a way to incorporate intermediate fasting with a way to make keto food without all the work. This is a great summer diet because when it is over 100 degrees salads are the perfect way to stay cool.
The two pillars of this diet are intermittent fasting and keto. Simply pick your protein, cut up your veggies, fill up a large salad bowl and top with a low carb salad dressing. Then you give yourself one hour to eat as much of your salad as you can.
The execution is extremely easy. The only thing you must worry about is what you want in your ridiculously big salad. Here is my go-to recipe for a fresh and easy salad, allowing you to “eat like a bear.”
Eat Like a Bear Salad Recipe:
- 8 oz grilled chicken
- 1 avocado
- ½ cucumber
- ½ cup shredded cheddar cheese
- ½ head of romaine lettuce
- 4 sliced radishes
- ½ cup cherry tomatoes
- 1 cup of peeled sunflower seeds
- 1 cup of cilantro lime vinaigrette

Once you have grilled your chicken and chopped up all your veggies. I want to make a note that by including sunflower seeds into your salad you add an excellent source of vitamin E and the salty crunch changes the taste of the salad. The sunflower seeds are by far my favorite part. Throw all of it into your large salad mixing bowl. Toss thoroughly.
Set your timer for one hour and eat as much as you can. You do not need to finish the whole thing during your first few tries as it is a lot of food for one person. The goal of the diet is to eat once a day and fast for the rest. This is no easy task but have no fear, as a beginner you can save what you do not finish and eat it when you are feeling hungry later that night. As you continue this diet, you will find it is easier to fast for 12 hours at a time.
All the ingredients in these salads are up to you to decide. As long as you have 6- 8 oz of protein feel free to try different salad combinations and add in veggies that you enjoy! As always check with your doctor before starting any diet.
