Oliveto Italian Bistro Offers Its Patrons Tasty, Healthful Options

Eating healthy tops many New Year resolution lists and, thanks to Oliveto Italian Bistro in Moore, achieving that goal has never been so easy or tasted so good.

Oliveto's menu is full of modern, artisan-inspired cuisine including pastas, paninis, woodstone baked entrees and pizzas, as well as an extensive wine list, house-made peach Bellini’s and specialty cocktails. And with a menu full of mouthwatering dishes like these, it’s easy to be tempted.

Luckily, Oliveto’s menu is highly customizable. In fact, nearly everything on the menu can be made gluten-free, pastas can be traded in for riced cauliflower, and all their signature pizzas can be made with cauliflower crust.

Health-conscious diners can choose from gluten-free options of traditional dishes like Chicken Alfredo, as well as more daring dishes like the Caliente Chicken–sliced chicken breast, onions, jalapeño bacon, tomatoes, cheddar, jalapeños and spicy tomato cream sauce with thin spaghetti.

Or, have your pasta your way with gluten-free penne, your choice of sauce, and with or without meat.

But it’s the rigatoni rustica, citrus cedar plank salmon, roasted rosemary chicken and jalapeno risotto that steal the show, said Oliveto manager Harrison Sikes, who formerly worked at the restaurant as bartender. 

The next step in the development of the restaurant’s customizable menu is to make it adaptable for diners following Keto restrictions, Harrison said.

A longtime resident of Moore and co-owner of Oliveto’s in Moore, Mike Sikes got his start in the restaurant business with another Oklahoma-based Italian eatery, Mazzio’s Pizza. After 32 years with the company, Mike decided to open a restaurant of his own.

“I’d always worked in the restaurant business and I’d always wanted to open a restaurant in the town where I live,” he said.

Rather than start from scratch with a new concept, Mike decided to pursue a franchise opportunity. While researching his options, Mike said he repeatedly was drawn back to Oliveto Italian Bistro, which originated in Tulsa.

“I think that's something that makes this restaurant unique,” Harrison said. “The atmosphere is pretty laid back, but extremely welcoming and warm. And if you want to go to a movie, we can get you in and out in 30 minutes. Or if you want to enjoy a long meal with a few courses and bottles of wine, we can cater to that, too. It's the best of both worlds for people.”
