The wait is over. Fall drinks are here, and a new season is being poured throughout the Treasure Valley. As autumn arrives, businesses are bringing seasonal favorites back to their menus while introducing fresh takes on familiar flavors worth trying before they disappear. From real-pumpkin milkshakes and apple cider chai to toasted marshmallow mochas and festive Italian sodas, fall has more than one signature sip.
Family Roots and Idaho Flavors at Truffles, Etc.
Located in the heart of downtown Meridian, Truffles, Etc. has been family-run since 2020. The Black family brings a little Idaho into the shop, including handpicked huckleberries gathered in McCall, locally sourced ingredients, and art and gifts made by local artists. With coffee, chocolate, homemade ice cream and seasonal drinks, there are plenty of ways to put something new in your cup this fall. Barista Kierstin Black recommends the Apple Cider Chai, made with real apple cider, spiced chai and milk.
"It's so good," she says. "Probably my favorite off the menu."
The fall lineup doesn't stop there. Seasonal favorites include the Salted Maple Latte, White Pumpkin Mocha and Pumpkin Spice Chai, while the Cranberry Orange and Caramel Apple Italian Sodas offer a refreshing alternative. And for something beyond the cup, the Caramel Bourbon Pecan Affogato pairs homemade ice cream with espresso for a rich fall treat.
A Boise Classic Gets a Pumpkin Twist
Fall flavors don't always come in a coffee cup. Westside Drive-In has been a Boise institution for generations, the kind of place locals have strong opinions about and out-of-towners discover and immediately regret not knowing sooner. This fall, it gets its seasonal spin with a Pumpkin Milkshake made the way everything at Westside is made — with real ingredients.
"We offer our Pumpkin milkshakes beginning in September annually. We use real pumpkin and season it to add to our milkshakes. They're a hit and everyone loves real ingredients," says Josh Aaron, Chef and Co-Owner.
The focus on quality extends beyond the seasonal shake. Westside uses fruit from the local Oregon Fruit Company in all its fruit milkshakes, a detail Aaron says customers can taste. And if you're looking for something to go with your shake, the homemade bread pudding makes a fitting fall companion.
A Fresh Take on Fall
For a seasonal option with a different kind of indulgence, Aubergine Kitchen is bringing back its Pumpkin Spice Smoothie and Pumpkin Spice Cookie. The chef-driven restaurant takes a made-from-scratch approach, preparing food in-house with an emphasis on whole, nourishing ingredients — a commitment shaped in part by founder Elcio Zanatta's childhood on a Brazilian farm.
"Nothing is fried, and we use no seed oils or added sugar. We've also never served soda. Instead, we sweeten with fruit and dates and use nourishing fats like extra virgin olive oil, nuts, and seeds," says Zanatta, CEO and Founder.
"Changing people's lives with real food" is the goal, he says — and the Pumpkin Spice Smoothie brings those values into a seasonal sip. Aubergine Kitchen has locations in both Eagle and Meridian.
With a Little Fizz
Fall gets fizzy at Swig. This year's limited-time lineup includes returning favorites Spice Spice Baby and Autumn Blush, joined by the new Caramel Apple. The drinks bring together flavors like pumpkin, cinnamon, apple, raspberry and caramel, while mini pumpkin chocolate chip cookies add a seasonal bite.
"Fall flavors have officially returned to Swig," says Cassidy Salisbury, Director of Public Relations. "This year's fall lineup has a little something for everyone."
Four businesses, four distinct personalities, one season. The Treasure Valley does fall well — all you have to do is show up thirsty.
