Owner Hollis Hunt of Trailhead Cafe insists his house made green chili is a must! (House-ground pork, green chilis, fresnos, fire roasted tomatoes and jalapeños.) I started making it with one of my best friends when I was in my 20’s. I love when people enjoy it. It really reminds me most of community and friendship. It’s like 30 years of friendship, love, trials, errors and delight in one pot.
When I eat a bowl of it… it’s almost overwhelming with the memories and stories.
Ally Tennison of Full Mouth Dumpling shares, “Siu mai is one of the famous traditional dim sum dishes from my hometown, and I have eaten it since I was a child. The main ingredients are pork and shrimp. I want to give the people of Northern Colorado a new understanding of authentic Chinese food and show them that it means more than just sweet-and-sour options. It’s about eating healthier, more nutritious homemade food.”
Christina Alvarado of Rise Artisan Bread says, “Our bagels are divine, especially the Asiago bagel, and so is our phenomenal sandwich, the Kiera with sausage.”
“I love everything about bread, especially the science behind it. There’s something special about transforming a few simple ingredients, flour, water, salt and yeast, through fermentation, time and technique into something delicious.”
Owners Annie and Bob say, “We opened Rise in Berthoud because we loved the small-town community and saw an opportunity to create a gathering place where people could enjoy fresh-baked bread, pastries, breakfast, lunch and coffee while connecting with their neighbors.”
“The best things on a menu come with something you can’t list as an ingredient: a story.”
