Taking the 'Yuck' Out of Eating Healthy

Eat healthy, who wants to do that?

Many people ask themselves this question daily. We often don't eat healthy because cheap and ready made meals are just too easy. They can stop on their way home from a long hard day at work and spend 10 to 15 minutes in a drive-thru and have a hot ready meal. The problem is most of these meals are not good for them. Most fast food is high in fat, salt, and sugar. They often come with some sort of dipping sauces or ketchup which are also high in fat, salt, or sugar.

What if there were some good recipes that were proven to be good for you, and didn't take that much time to prepare and cook?  Would you consider making them?    

Here’s an example of a mouth-watering meal that even your pickiest family members might enjoy. It's simple and easy to make. Let’s take a look at Lasagna Soup.


  • 10 ounces of cooked ground sirloin 
  • 1 cup skim ricotta cheese 
  • 4 ounces 2% skim mozzarella cheese 
  • 2x 14 ounce cans of diced Italian tomatoes 
  • 6 servings sliced or diced raw zucchini and or yellow squash
  • 1 teaspoon minced garlic 
  • 1/2 teaspoon salt 
  • 1 cup reduced sodium chicken broth 
  • 4 tablespoons parmesan cheese 
  • 1/2 teaspoon garlic powder (optional)
  • Additional 1/2 teaspoon of salt (optional)

Add cooked ground sirloin, tomatoes, zucchini, squash, minced garlic, salt, and chicken broth to a pot or crock pot and simmer on medium heat for at least 30 minutes or until zucchini is cooked.

Mix ricotta in a separate bowl with the optional garlic powder and ½ teaspoon salt.  

Separate the soup into four bowls.  Place 1/4 of the ricotta mixture into the center of each bowl.  sprinkle 1 tablespoon of parmesan cheese on each bowl and cover each with one ounce of mozzarella. 

Broil on high for two to six minutes until cheese is slightly Brown.  Let stand 5 min and serve.  Delicious!        

This fantastic healthy meal will leave you wanting more. It is a healthy dish that you will want to recreate time and again. Give it a try.
