Steering the kitchen through this unique balance is Head Chef Danny, whose passion for culinary craftsmanship and team culture shines through every dish that leaves the pass. We sat down with Chef Danny to discuss his journey, his philosophy, and what makes the kitchen at Beach Glass Lounge tick.

The Journey: From Family Meals to Fine Dining

Chef Danny’s path to running a kitchen didn’t begin in a traditional culinary school classroom, it started at home. As the oldest of seven children, he grew up cooking family meals whenever he got the chance. That early love for feeding people naturally evolved into a career.

"I didn't go to culinary school, I've been hands-on in kitchens the whole way, learning as much as I could specifically in fine dining over the past ten years," Danny shares. His big turning point came at a smaller Italian restaurant where he worked alongside an exceptionally knowledgeable team. "From the chef and sous down to the prep cooks, everyone on that line had something valuable to teach me, and it just fueled the fire."

Danny joined Beach Glass Lounge as sous chef when the doors first opened roughly two years ago. Through a leadership transition, he stepped into the head chef role, his first time running a kitchen. "It's sharpened everything I learned in those years before it," he notes.

Culinary Philosophy & The Craft

Danny describes his personal culinary style as fresh and balanced. Rather than overloading a plate, his goal is to create harmony. "Personally, what I find most satisfying is when I can taste every single flavor and texture I built into a dish. That translates into how we run the menu here: diverse flavor profiles and portioning that give every element room to actually be tasted."

Beyond flavor, Danny views cooking as a physical discipline. A key lesson he leans on daily is "moving with intention." In a fast-paced kitchen, fluid movement and good posture save strain over long shifts. "Once you're really flowing, it's like a dance," he says.

Chef’s Picks & Seasonal Sourcing

When asked for a menu recommendation, Danny points to a dish close to his heart: the Steak Au Poivre. "I personally worked on that recipe for the better part of a year before I got it just right years ago. It's just too good not to try." For a personal favorite behind the scenes, he craves the double bone pork chop served blushing pink with a sweet and salty house-made chutney, designed to complement every bite.

Being situated right on Lake Erie heavily influences the menu, especially through partnerships with local purveyors like Bergman’s, The Corn Lady, and Thistle Dew for fresh microgreens. "The local purveyors know what they're doing, and I can't thank them enough," Danny explains. "This fall, I'm building specials around the fresh harvest, especially carrots, broccoli, and sweet potatoes. It's less about chasing a trend and more about matching the kitchen to what the season is actually giving us."

What sets Beach Glass Lounge apart is its distinct atmosphere: "upscale, but lake life." Danny describes it as a playful line where elevated hospitality meets a relaxed vibe. "On our best days, everybody is having a good time, guests and crew alike. Great food, great drinks, great times."

That positive energy starts in the kitchen, where camaraderie, music, and mutual respect keep the team motivated. "The energy in the kitchen is awesome, most of us are really in it for the love of the game," Danny says. "When it gets busy, I float to stations and ask my crew, 'What can I do to help you?' That way they know I've got their backs. The culture in this kitchen is something we take huge pride in."

Working alongside Chef Danny’s kitchen, the lead bartender brings a dynamic approach to mixology, crafting thoughtful cocktails while ensuring every guest feels right at home. The Spark & Behind-the-Scenes Chemistry

Every great bartender has a story of how they found their place behind the pass. For the lead bartender at Beach Glass Lounge, it all began with community.

"I got my start behind the bar through the people I met and the connections I made, which opened the door for me to discover bartending," he shares. "What made me fall in love with mixology was the combination of creativity and science behind the craft. Being able to experiment with flavors, techniques, and ingredients to create something truly unique is incredible. But most importantly, creating long-lasting relationships with our guests is ultimately my biggest love."

"The biggest responsibility often not seen in the public eye is balancing the personalities of the bartenders and promoting a chemistry where you all blend into one unified experience while still standing out as individuals," he explains. That vibrant balance pays off, if regulars had to describe his personality behind the bar in just three words, they’d tell you: vibrant, eccentric, and entertaining.

Inspiration, Harmony & The Signature Pour

When it comes time to build out a new menu, inspiration is drawn from every direction. "It’s really a blend of classic recipes, locally sourced ingredients, local trends, and, most importantly, what our guests are asking for," he notes. "Beyond that, I’m always trying to create something that feels timeless and unique, with a new flare that's just different enough to stand out."

That innovation doesn't happen in a vacuum. The bar team collaborates closely with Chef Danny and the kitchen staff to ensure every sip complements what’s on the plate.

"When we’re developing both the cocktail and food menus, we sit down together and think about which drinks complement specific menu items, as well as which cocktails can be versatile enough to pair beautifully across the entire menu. It’s really about creating a complete experience where the food and drinks work together rather than feeling like two separate menus."

As for the personal favorite drink to make for guests? That honor goes to their standout Espresso Martini.

"It’s especially meaningful to me because I hand-created it from the very beginning.From developing the recipe and balancing the flavors to the final presentation," he says. "I love watching it come together because it’s a cocktail that combines creativity, technique, and presentation in a way that really reflects my approach behind the bar. Everyone has an espresso martini, but not everyone has ours. The high demand and craftsmanship make it all around one of the best in the state."
