Owner and Head Chef of Hungry Herbivore Kitchen Lorna Rosenblum’s ultimate goal when creating a dish is making it taste good.
She says, “I want people to be able to eat a compassionate and environmentally conscious diet without having to sacrifice any of their favorite foods or compromise on flavor.”
Having opened at the beginning of the year, she thinks despite how awful the pandemic has been for everyone, oddly enough, a meal delivery business was the perfect company to launch at the time.
“While many restaurants were forced to pivot to menus that were more conducive to take home and reheat, I was able to build an entire concept from the start around that idea,” Lorna says, who felt compelled to go vegan five years ago after watching the documentary Cowspiracy.
“I had always considered myself an animal lover and environmentalist, but after watching that documentary, I realized that my actions were not aligned with my values. I went vegan the next day,” Lorna says.
Despite Boulder’s incredible foodie reputation, Lorna found there to be a lack of fully vegan restaurant choices, except for a couple of fast-casual spots. So, she created one herself. Hungry Herbivore Kitchen is Boulder’s only plant-based meal delivery and virtual marketplace, delivering fresh, organic meals directly to doorsteps. The company’s motto: Eat like it’s going to change the world.
Weekly menus are posted online with then meals are made and created at the end of each week to ensure freshness. Varied offerings include baked soy curl green chili burritos, moussaka, wild rice soup, asparagus risotto, flourless chocolate cake topped with pomegranates or peanut butter silk pie.
Having graduated culinary school with a degree in Culinary Arts and Food Service Management from Johnson and Wales in 2012, Lorna has worked in both the front and back of house in restaurants around the world. Her first position out of school was at the Flagstaff House, under then Executive Chef Mark Monette.
“I wanted to share my passion for great vegan food with my community, and since there weren’t any fully vegan restaurants in Boulder, I decided that I would start my own business,” Lorna says.
