Almost everyone loves breakfast burritos. We also love it when cooking is easy. So whether you are cooking for yourself, want to make a bunch for freezer meals, or have the whole extended family coming. Here is a quick recipe that is easily adapted for a large crowd or just yourself.
4 Eggs
2 Strips of thick-cut bacon or breaded chicken strips (or do both, we won't judge)
1 Cup of french fries (seasoned curly fries are a great choice here)
1/3 Bell pepper
1/3 Onion
1/2 Roma tomato
1 tsp. of garlic
Ranch (to taste)
Frank's Red Hot (to taste)
Top with shredded cheddar cheese
First deep fry the fries (air fryers are also great here to cut down on a few calories). Cut the bacon into bits and cook. Or if you choose to use chicken strips, fry those and cut them into bite-sized pieces. Dice the bell peppers, onions, and tomatoes into small pieces. When that's done, mix all the ingredients together in a big pan and cook them all together (be careful to not smash the fries! The fries add a great texture). Then place them all on your favorite tortilla and top off with ranch, hot sauce, and cheddar! These measurements are for 2 burritos but feel free to add more or less to taste or the number of people you plan on having over. If you plan to make a batch for freezer meals, just make the burritos as normal then put them in the freezer. When you're ready to eat them, pop them in the microwave and enjoy them on the go!
