Title: Fresh Ingredients, Superb Flavors
Allegro Bistro's Nella Valenti grew up watching her mother, aunt, and grandmother cooking in her native Sicily. Now having cooked great Italian food for Venice locals for going on 35 years, what Nella learned back then is still what guides her. Fresh ingredients. Simple flavors. Letting the gorgeous meats and vegetables shine. Pictured here is one of Allegro Bistro's signature dishes, the Chicken Allegro. Insisting there is no formal recipe, Nella says that the highlights of the dish are the sun dried tomatoes, the broccoli, the chicken of course, and the artichoke. "You want to use plenty of white wine in this dish," Nella explains. "And of course it should be a white wine from Sicily. We had so many tomatoes in the area where I grew up. Part of what makes Chicken Allegro so special is that it highlights the foods that we had because we grew them!"
