GREEN GODDESS SUMMER SALAD
SALAD:
Spring mix salad, spinach, edamame, shredded carrots, sesame seeds, cucumbers, cherry tomatoes, and croutons.
GREEN GODDESS VINAIGRETTE:
60g fresh garlic
50g fresh parsley
50g fresh cilantro
3/4 cup red wine vinegar
2 tbs mustard
250g fresh spinach
750 ml olive oil
Purée all except the oil for about 5 minutes.
Slowly drizzle the oil in and serve.
Yields 6 cups(1500ml)
