These Smokey, Sweet & Savory Recipes Are Sure to Be Summer Staples

Juicy Bacon Hamburgers

Ingredients

2 pounds lean ground meat

4 slices, cooked, crispy bacon

1/4 cup green onions, coarsely chopped

2 tablespoons steak seasoning 

1 tablespoon dried basil

1 tablespoon avocado oil

Directions 

Preheat an outdoor grill to 600º 

Place bacon & green onions in a food processor & pulse several times to get it finely chopped.

Combine meat, bacon, green onions & all other ingredients in a large bowl until well combined.

Divide meat evenly into 6 sections & shape into hamburger patties.

Grill to desired doneness.  About 3-4 minutes per side should give you a nice medium burger. Adjust as desired.

Allow meat to rest a few minutes before serving. 

Plank Grilled Salmon (with Pineapple Salsa)

Ingredients

2 pounds wild salmon with skin on

2 tablespoons lemon juice

1 tablespoon dijon mustard

1 tablespoon honey

1-inch piece of ginger, peeled & chopped very fine

1 teaspoon salt

1/2 teaspoon pepper

zest of 1 lemon

1 large cedar plank  

1 recipe pineapple salsa

Directions

Preheat outdoor grill
Make sure to soak the cedar plank in water for 1 hour before grilling.

Whisk together lemon juice, dijon mustard, honey, ginger, salt, pepper & lemon zest in a small bowl.  

Rub the lemon mixture all over the flesh of the salmon.

Place the salmon on the wet cedar plank & put the plank on the grill, over indirect heat, for 10-25 minutes.  Cooking time will depend on how well done you like your salmon, but about 15-18 should give you a nice medium.

Once fish is done, serve immediately with pineapple salsa.

Pineapple Salsa

Ingredients

2 cups fresh pineapple, finely diced {you will easily get this amount + a little extra from 1 whole pineapple}

2 roma tomatoes, seeded & chopped fine

1/2 cup cilantro, chopped

1 jalapeño, seeded & finely chopped

1/4 cup purple onion, minced fine

3 tablespoons lime juice

1/4 teaspoon each: salt & pepper

Directions

Chop all ingredients according to the description & place in a medium size bowl with a lid.

Add lime juice, salt & pepper; stir & cover. 

Refrigerate 15 minutes before serving.

Simple Grilled Chicken

Ingredients

6 chicken breasts

1/4 cup olive oil

1 tablespoon lime juice

1 tablespoon herbs de provence

1 teaspoon salt

1 teaspoon pepper

1/2 teaspoon cumin

1/2 teaspoon paprika

optional garnish: extra limes for squeezing juice onto chicken when done 

Directions

Preheat an outdoor grill to 600 degrees & preheat indoor oven to 250 degrees. 

Combine the dry spices, olive oil & lime juice in a small bowl.

Place chicken & marinade in a large baggie or sealed container, making sure all the pieces of chicken have been coated with the marinade.

Allow to marinade for 15 minutes; then grill chicken about 3-4 minutes per side.  Remove chicken to a glass dish & cover with foil.  Place chicken in oven for 20 minutes.  Allow to rest 5 minutes after removing from the oven.

Serve immediately or slice & add to lunch tomorrow!

Grilled Flank Steak 

Ingredients

2 pounds flank steak

1 tablespoon chili powder

1 tablespoon cumin

2 teaspoons granulated garlic

2 teaspoons salt

1 teaspoon pepper

2 tablespoons freshly squeezed lime juice

1 tablespoon ghee

1 tablespoon olive oil

Directions

Combine the dry spices in a small bowl.

Generously rub the spice mixture on all sides of the steak.

Wrap the steak tightly with plastic wrap & refrigerate at least 6 hours.

Preheat an outdoor grill to 600 degrees & preheat indoor oven to 200 degrees.

While the grill is preheating, remove the steak from the plastic wrap & rub the olive oil all over the meat. Grill 7-9 minutes per side; then remove to a glass baking dish.

While the meat is on the grill, melt the ghee in a small pan over low heat & whisk in lime juice.  Remove from heat as soon as the lime & ghee are combined. 

When you bring the meat inside, pour the ghee & lime juice mixture over the meat. Cover the dish & let it rest in the warm oven for 20 minutes.

Remove from oven & slice thinly across the grain of the meat.  Serve hot.
