Amalia Culinary Art's Recipe: Oven-Roasted Peppers, Onions, Mushrooms, Asparagus Medley

Ingredients:

  • 1 large red, yellow and orange bell pepper, seeded and sliced into strips
  • 1 large red onion, sliced
  • 2 Portobello mushrooms, stems removed and sliced
  • 1 bunch of asparagus, tough ends trimmed
  • 3 tablespoons olive oil
  • 1 teaspoon rosemary garlic
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Directions:

  1. Preheat oven to 425°F and line a large baking sheet with parchment paper.

  2. In a mixing bowl, combine the vegetables.

  3. Drizzle olive oil over the vegetables and add spices. Toss vegetables until evenly coated.

  4. Spread vegetables in a single layer on the baking sheet, ensuring they are not overcrowded. This allows for even roasting and caramelization.

  5. Roast the vegetables for 20-25 minutes or until tender and slightly caramelized.

  6. Once roasted, allow the vegetables to cool slightly before serving.
