Healthy and Delicious Treats at Alt Eats

Just What the Doctor Ordered

Still think eating healthy means sacrificing taste? How about avocado toast with mango, cilantro, red onions, and lime or a bowl of truffle mac and cheese? Offered at Alt Eats Café in Ho Ho Kus, all are vegan, can be prepared gluten and dairy-free, packed with nutritious ingredients, and delicious. “There was this misconception that eating healthy meant eating salads or cooked carrots, that there weren’t flavorful choices,” says Alt Eats owner Lori Iannone. “We have come a long way to change that; adding spices for flavor, different textures and luxurious fats.”

Iannone has put together two tasty recipes, each bursting with nutritious ingredients. The escarole in the Escarole and Bean Soup is high in fiber, vitamins C and A as well as folate. And the cannellini beans provide a high fiber and protein content.

The Aussie Shake, loaded with antioxidants and vitamins, tastes almost too good to be so healthy. “When you make a smoothie with fresh fruits you know exactly what’s going in your body,” she says. “And when you eat better, you feel better.”


*Escarole and Bean Soup

¼ cup olive oil

12 cloves garlic

3 heads escarole, washed and cut up

3 quarts vegetable stock

Two 15-ounce cans of cannellini beans, drained and rinsed

¼ teaspoon red pepper flakes

Salt & pepper to taste

Freshly grated parmesan cheese for serving

In a large pot sauté the olive oil and garlic until brown. Add the escarole, stir and cook it down for about 10 minutes. Then add the vegetable stock, beans, and red pepper flakes, season with salt and pepper to taste, and simmer for 10-15 minutes. Sprinkle with fresh parmesan for serving. Makes 6 quarts and freezes well.

*Aussie Shake

½ cup pineapple

½ cup strawberries

½ cup kiwi

1 cup orange juice

Add fruit and orange juice to a Ninja or high-powered blender. Add protein powder if desired. (For an icier shake, freeze the fruit first).
