Cinco De Mayo is one of my favorite times of the year. The holiday is widely interpreted as a celebration of Mexican culture and heritage, especially in Arizona where celebrations of the mexican holiday means making lots of yummy hispanic food!
One of my favorite american mexican food is nachos but with all the unnecessary calories of the tortilla chips really add up over time and before I found this recipe I would always have to pass on them in order to maintain a healthy diet! After years of missing out on the delicious mixture of cheese, ground beef and salsa Audrey from We’ve Got You Cover recommended this recipe to bring the joy of nacho’s back into my life!
Audrey recommended substituting unhealthy tortilla chips in my nachos of the lighter and tastier plantain chips! This simple swap took hundreds of calories out of my regular nachos! Plantains are rich in potassium, vitamin A, and vitamin C which make them a nutritious substitute for flour tortilla chips.They also are high in fiber, are considered a natural antioxidant and are great for supporting heart health!
This recipe works great for feeding a hungry family or for snacking at a festive Cinco De Mayo party with friends! These yummy chips will spice up your regular nacho recipe while endorsing a healthy lifestyle!
Recipe:
1 pound of plantain chips
2 teaspoons coconut oil
½ sweet onion minced
3 cloves garlic, minced
2 tablespoons chili powder (or cut it in half if you don’t like to much spice)
1 teaspoon ground cumin
½ teaspoon oregano
¼ teaspoon cayenne pepper (or omit if you don’t like to much spice)
1 pound ground turkey (or you can use any ground meat that you prefer)
4 tablespoons coconut aminos
2 tablespoons tomato paste
Toppings: minced scallions, sliced jalapenos, diced avocado, shredded lettuce, diced tomatoes, fresh lime juice, shredded cheddar cheese.
Heat the coconut oil in a pan and saute the onion and garlic until softened. Add the ground meat to the pan and sprinkle all the spices onto the meat. Mix and break up the ground meat into small pieces. Add the coconut aminos and tomato paste and mix meat again. Continue cooking until the meat has cooked through and is the consistency that you prefer.
You can either place the plantain chips on a plate and then add your cooked meat on top or just put the meat into a bowl and dip your chips. Add the toppings that you like, go crazy and make it your own.
SIDE BAR TIPS: You can make your own Plantain chips or buy them from the store to safe time and energy for a quick healthy snack!
