Ingredients

1 1/2 pounds Sablefish (4 x 6-oz portions)

1/4 cup mirin

1/4 cup sake
-
4 tbsp white miso paste

3 tbsp sugar

4 tbsp sesame oil
Marinade:

Bring mirin and sake to boil for 30 seconds.

Turn heat to low, add miso paste and sugar, whisk until completely dissolved.

Remove from heat and cool to room temperature.

Place fish in ziploc and pour cooled marinade over. Refrigerate for 2-3 days.
Cook:

Preheat oven to 425.

Pour sesame oil in oven-proof skillet on high heat.

Place fish skin side up and cook until flesh side is browned (3-5 min).

Flip fish and place skillet in oven to bake until opaque and flakes easily (8-10 min).
