Ingredients:
- 1 1/2 ounces gin (Waterloo Gin)
- 3/4 ounce fresh lemon juice
- 3/4 ounce kumquat simple syrup (see below)
- Champagne or Prosecco
Instructions:
Add the first 3 ingredients to a champagne flute. Top with Champagne or Prosecco. Garnish with candied kumquats.
To make the simple syrup, add 2 cups water and 2 cups sugar to a saucepan. Stir over medium heat until sugar is dissolved. Add in 1 cup of cleaned, halved Kumquats. Cook over medium heat for 20 minutes.
If you can’t find kumquats, don't worry. Make a simple syrup using any kind of fruit that looks good. Or just use a regular simple syrup for a traditional cocktail. Experiment and have fun.
