Chili - Gary's Way

For When You Want It Just Right

We know many of you have been to Gary & Meg's Chicken and Ribs and we are the first ones to testify to the absolute heaven-in-your-mouth order of their bone-sucking ribs with side orders of their Sinful Mac'n Cheese and Meg's Corn Concoction but when they break out their homemade chili, called Chili - Gary's Way, you know things just got real.

Ingredients;

5 lbs of sausage meat of your choice (we fresh grind our own in-house so pre-ground store-bought may taste a little different)

29 oz can diced tomatoes

29 oz can red kidney beans

29 oz can sweet corn

2 onions (large dice)

4 poblano peppers (large dice)

1 qt. of tap water

2 tbsp salt

2 tbsp pepper

1 tsp cayenne pepper

2 tbsp smoked paprika

2 tbsp chili powder

Directions:

Brown the sausage meat in the pot you will cook chili in. After the meat is browned, pour in the water and tomatoes. Stir while scraping the bottom of the pot to deglaze the greatness from the sausage. Add in the salt, pepper, cayenne pepper, smoked paprika, chili powder, onions, and poblano peppers. Simmer for 1 hour then add the corn and beans.  Simmer for another 30 minutes. Serve while hot and prep for the high fives that follow.
