Sonora’s Prime Meat & Carniceria: Meat and So Much More

Growing up in Mexico, Jasmine Fletes and Omar Teyechea were raised to be very proud of their culture and traditions. Their family recipes were passed down from previous generations to connect them with their heritage.

“I want people to have the chance to enjoy and appreciate our culture. We love our traditions and our food. We want to show people just how varied Mexican cuisine can be,” Fletes says.

Finding Love and Realizing Dreams

Fletes was raised in Jalisco, a west central region of Mexico. Her father was farmer and owned a carniceria. She and her four sisters helped with the family business. When Fletes was a teenager, her family moved to Pueblo and her father opened 3 Margaritas. He taught Jasmine everything she needed to know to run a restaurant.

Teyechea grew up in Tarachi, Sonora, a northern border region of Mexico. He trained to become a butcher and dreamed of one day owning his own carniceria.

The two met in Pueblo, fell in love and married in 2002. Together, after a few trials and tribulations, they made their dreams come true. They opened their first Sonora’s Prime Taco Shop & Carniceria in Pueblo. Soon after, they opened a location in Tucson, Ariz., that is currently run by extended family.

A Family Affair

Business was thriving, so Fletes and Teyechea decided to partner with Fletes’ sisters to expand. They opened a second location in Pueblo and a few years later, they moved to Colorado Springs and opened their first location on Barnes Road. Just a year later, their fifth location opened in Falcon.

“We have a motto, Family First,” Fletes says. “We are very much a family business, and I wanted my sisters to realize their dreams, too. We all love to work and we love what we do. This business allows us to have good balance of work and family.”

One Stop Shop

Sonora’s Prime is a destination where you can enjoy a meal, grab some imported and house-made goods and groceries, and stock up on high-quality cuts of meat at their large meat counter. Teyechea has curated a wide selection of cuts and meats that have been lovingly marinated using his family’s recipes.

“Our meat marinades have no artificial color, flavors, or preservatives,” Fletes says.

Tacos and More

The menu at their taco counter is extensive. They offer tacos, burritos, nachos, enchiladas, tortas, soups, quesadillas and desserts, to name a few. They also offer a choice of meat for each menu item including asada, adobada, al pastor, barbacoa, carnitas, chorizo, ground beef, shredded chicken and grilled chicken. The options are endless.

Don’t forget to stop at the salsa bar to load up on house-made salsas, sauces, and toppings for your meal. The salsa bar is free with your meal purchase, and they even provide to-go containers for take-out meals.

“A good taco isn’t just the taco and the meat,” Fletes says. “It’s all about the condiments!”

For dessert, they offer flan churros, churro cheesecake, tres leches cake and sopapillas. They also have a bakery case where they proudly sell baked goods from Norma’s Bakery, a bakery here in Colorado Springs.

Groceries and Supplies

If you love to cook, they have everything you need to prepare a delicious Mexican meal. You can purchase house-made items such as salsas, sauces, queso and tortillas. They also offer fresh produce, Mexican cheeses, chips, candies, canned goods, spices, as well as a vast selection of imported and house-made Mexican beverages.

If that isn’t enough, you can also purchase imported Mexican stoneware to cook with and serve your home-cooked meals in. They really have thought of everything!
