Humanitarian Wrap

  • 1 warm sundried tomato tortilla
  • 2–3 tbsp hummus
  • 1/2 cup cooked quinoa
  • 1/4 cup steamed broccoli florets
  • 1/4 cup diced tomato
  • 1/4 cup sliced cucumber
  • 2–3 pepperoncini peppers, sliced

Warm the tortilla: Heat the sundried tomato tortilla in a pan or microwave for a few seconds to make it pliable. Spread the hummus: Evenly spread hummus over the center of the tortilla. Layer the fillings: Add a layer of cooked quinoa, top with steamed broccoli florets, sprinkle diced tomato and sliced cucumber, add sliced pepperoncini for a tangy kick. Wrap it up: Fold the sides of the tortilla over the filling, then roll tightly from the bottom to form a wrap. Serve and enjoy.
