Together, they laugh over a potato-peeling mishap and sneak a few tastes to make sure the flavors are just right. Josiah's Vegetable Soup
Prep Time: 20 Minutes
Cook Time: 1 Hour
Serves: 6 Servings

Ingredients
1 tablespoon olive oil
1 onion, chopped
4 cloves garlic, minced
5 tomatoes
2 potatoes, peeled and diced
5 cups vegetable broth
1 tablespoon ground cumin
1/2 lime, juiced
1 (15 oz) can black beans, drained
1/2 cup cilantro, chopped
salt and pepper to taste
Preparation
Step 1
In a large pot, sauté onions in oil over medium high heat until tender.
Step 2
Add garlic and tomatoes, cook for 2 minutes, stirring often.
Step 3
Add potatoes, broth, cumin, and lime juice. Bring to a boil, then reduce to simmer for 30 minutes or until potatoes are cooked.
Step 4
Add beans, cilantro, spinach, salt, and pepper. Simmer until heated through.
