The name "Kolucan" holds deep personal significance for Calleja, evoking cherished memories of his childhood in the small town of San Lucas Colucán, Mexico, where the name resonates as a constant reminder of his family and cultural roots.
Both Calleja and Rojas are no strangers to Sarasota’s dynamic dining scene. Having honed their culinary skills at various renowned local eateries, they bring a wealth of experience and passion to Kolucan. Their shared dream was to create a restaurant that offers something truly unique—a menu that expertly blends the rustic, traditional flavors of Mexican cuisine with a modern, elevated flair. "The flavors that my mom created were rustic and full of soul," Calleja reflects. "I wanted to bring those childhood memories to Sarasota, but in a high-end, elevated way, offering something authentic that you don’t see anywhere else."

Highlights of the menu include the huachinango "snapper", a traditional dish from the titular Mexican region, and callo de hacha "scallops" served with a savory street corn risotto. The mole poblano, a rich, complex dish, is served with short ribs, potatoes, and a crisp, savory finish, embodying the balance of nutty, sweet, spicy, and earthy flavors that define Mexican cuisine.
