Work doesn’t feel like work to Matthew Bean. He sees it as making the world more beautiful one cake, one event, one photograph at a time.

Trouvaille Bakery

When Matthew Bean designs a cake, he envisions beauty.

Fashion.

Art.

A recent cake drew inspiration from Claude Monet’s water lilies. Swaying sugar flowers perch along the edges and ledges much in the way single orchids grow from tropical lava rocks.

“I love creating things,” he said.

After serving six years in the Air Force, Bean decided to immerse himself in something creative – studying pastry arts.

“It was beautiful,” he said. “It was just really inspiring to me.”

He launched Trouvaille Bakery in Maryland six years ago, initially focusing on small breads, petit fours and pastries. Later, he worked with a master cake designer and fell in love with the larger canvas.

In 2019, he moved to Colorado Springs and plans to stay, transforming sugar and flour into clients’ dreams.

His cakes start at $2,000. People ask why they should spend that much on a cake. Bean said the answer is simple: A Trouvaille cake will serve 65 of your loved ones. It is a statement. An investment. A memory.

Private Dinner Parties

More recently, Bean has ventured into offering private dinner parties.

He long has hosted extravagant dinner parties at his own home. But an unpaid internship (called a stage) at DC-area Pineapple and Pearls restaurant a few years ago created a spark.

“There’s this pulse that happens with really great dining,” he said.

He began thinking about the possibility of serving farm-to-table food in people’s homes. In 2020, he made it a reality.

Clients work with Bean personally to create a three-course menu that he finishes in their kitchens and serves to their guests. Dinners start at $150 per person. He gives a deep discount on cakes for private dining clients, with single tiers starting at $400.
