Ingredients:
2 oz aged dark rum
0.5 oz demerara syrup
2 dashes aromatic bitters
Luxardo cherry
Orange peel
Cherry wood chip
Large ice cube.
Directions:
Add rum, syrup, and bitters to a mixing glass with ice and stir until chilled and smooth. Strain over a large ice cube in a rocks glass. Express the orange peel over the drink and drop it in with the cherry. Light the cherry wood chip, extinguish to create smoke, and trap it in the glass using an inverted glass or cloche. Let the smoke infuse briefly, then reveal. The aroma leads, followed by a rich, slightly sweet sip that lingers like the final rev of an engine under city lights.
