Spring has arrived, and with it comes a craving for lighter, fresher flavors. This mint pesto is a simple recipe that captures the essence of the season and can become your versatile addition to any meal – perfect for tossing with pasta, spreading on sandwiches, or adding a burst of flavor to your grilled vegetables. Our personal favorites are adding it to a lamb burger or pairing it with a crostini and goat cheese (pictured)!
Springtime Mint Pesto
Ingredients:
- 2 cups mint
- ½ cup parsley
- ¼ pistachios
- Zest of ½ lemon
- ½ Tablespoon of lemon juice
- 3 Tablespoon of parmesan cheese
- ¼ cup extra virgin olive oil
- 4-6 tablespoons of cold water
Preparation:
- In a blender, combine all ingredients, adding only 4 tablespoons of cold water to start.
- Blend on medium speed until a creamy pesto forms.
- If pesto is too thick, add a tablespoon or two of water to thin it out to your desired consistency.
