No-Bake Energy Shots

Yep, These Are Pretty Much the Perfect Snack

I first saw these little bundles of goodness at Balance Café—and after consuming one was pleasantly surprised to find I wasn’t reaching for another snack hours later. Energy shots combine just the right amount of protein, good carbs and healthy fats—and they’re high in fiber. Best of all, they are extremely easy to make. I tried out a few recipes, and this one is easy and a new favorite (probably because it’s easy). Enjoy!

Ingredients

1 cup old-fashioned oats

½ cup peanut butter

½ cup ground flaxseed

½ cup dark chocolate chips

⅓ cup honey

1 teaspoon vanilla extract

Directions

Combine oats, peanut butter, ground flaxseed, chocolate chips, honey and vanilla together in a bowl until well blended.

Cover and chill the dough in the refrigerator for about 30 minutes.

Remove dough from refrigerator and scoop or roll into balls—about 1 inch in diameter.

If you prefer bars, press the dough into a parchment-lined baking sheet and cut into bars.

Wrap individually and store in an airtight container up to 2 months in the fridge.
