Westport loves meatballs!
Thank you, Randi Lehrman, for offering an easy recipe that's good enough to lure our chicks back to the henhouse.
"This recipe is super special to me because it ensures that my 21- and 23-year-old sons always make pitstop at my home to get them, hence, visit me. As they get older, more exciting venues beckon but these meatballs seal the deal that visits won’t go more than a week so they can take them back to either their apartment in Brooklyn or Syracuse University."
For every pound of ground turkey, add:
- ½ cup of whole wheat/panko/Italian seasoned bread crumbs
- 1 egg
- ¼ teaspoon red pepper flakes
- 1 teaspoon of onion flakes
- Garlic, salt, pepper, and Italian seasoning to taste
Roll them into balls. The larger you make them the longer they need to bake. Bake at 400 on a well-sprayed cookie sheet. It will take about 20-25 minutes depending on oven.
