Jared and Jen Fisher, Organic'ly Founders and Functional Nutritional Therapy Practitioners (FNTPs), started their journey to create this health food company after Jen was diagnosed with an autoimmune disorder.  She struggled with various symptoms that were triggered in part by wheat, grains, gluten, dairy, and soy. Organic Apple Cinnamon Muffins

Ingredients 

  • 1 package of Organic'ly cinnamon baking mix 
  • 1 cup unsweetened cinnamon applesauce 
  • 2 whole eggs 
  • 1 and ½ cups of milk 
  • 3 tbsps of liquid coconut oil (melt if necessary) 
  • ½ cup chopped apples (optional) 

Directions 

  1. Add all ingredients to a blender and blend until smooth. 
  2. Pour batter into lightly greased muffin tins. 
  3. Bake at 350° for 30 mins. 
  4. Insert a toothpick, and if it comes out dry, they're done. 

Optional Hand mix in 1/2 cup of chopped organic apples after you blend your batter.

Pro-tip Use parchment cupcake papers in the muffin tins to make them an easy grab-n-go snack for the whole family  

Organic Chocolate Cupcakes with Vanilla Frosting

Cupcake Ingredients: 

  • 1 package of Organic'ly cocoa baking mix (https://organiclyfoods.com)
  • 2 whole eggs 
  • 1 and ½ cups of milk 
  • 3 tbsp of liquid coconut oil 

Frosting Ingredients:

  • 2 tbsp milk 
  • 2 cups organic powdered sugar 
  • ½ cup softened butter 
  • 1 and ½ tsp of vanilla extract 

Cupcake Directions:

  1. Blend all ingredients until smooth. 
  2. Pour batter into lightly greased muffin tins. 
  3. Bake at 350° for 20 mins.
  4. Insert a toothpick, and if it comes out dry, they're done. 

Frosting Directions:

  1. Use a hand mixer or stand mixer to beat softened butter until light and fluffy (2 to 3 minutes). 
  2. Add in vanilla extract and mix until combined and smooth. 
  3. Add in powdered sugar 1 cup a time, mixing in-between additions until smooth.
  4. After adding in the 1st cup, add in milk and whip until smooth before adding in the 2nd cup of powdered sugar. 

When the cupcakes are thoroughly cooled, frost immediately. Sprinkles are optional, but we think life could sometimes use a little more sprinkle. Enjoy!
