Craft cocktail bar papercut recently celebrated its one-year anniversary. Already critically acclaimed, it won honors including Top 10 Best New US Cocktail Bars at the 2025 Tales of the Cocktail Spirited Awards. The art inside rotates every two to three months, and with it, the cocktail menu that’s inspired by the art and seasonal, locally sourced ingredients. There are some constants on the menu, including the signature cocktail, papercut, a play on a Paper Plane but with house-made tangerine liqueur and mezcal in place of bourbon. Dehydrated pineapple fronds skewer the cherry inside.
Tucked behind the dimly lit bar, you’ll find Konbini, a space as bright as a grocery store, (fitting since a konbini is a convenience store) and a sushi bar serving up an elevated dining experience courtesy of Chefs Michael Carranza and Danielle Martinez of acclaimed MICHELIN-recognized Tare. The menu, served until 1 a.m., can be enjoyed at the sushi bar or from papercut, and includes nigiri, sashimi, crudos, A5 wagyu and sandos served a la carte - with a Texas flair and Mexican influence on the Japanese cuisine.
