One may think that owning and operating two thriving restaurants makes for a glamorous lifestyle filled with fine dining and the satisfaction of running successful businesses. But as Travis and Tamra Tindol, owners of Hays City Store and Taste on Main, will tell you, the reality is far more demanding—and far less predictable. It’s their love for the industry and commitment to their community that drives them each day.

DAILY PLANNING

The Tindols’ day begins the night before, when they compare calendars and review the upcoming meetings, events, and tasks. From manager and chef meetings to vendor appointments and wine tastings, the Tindols have far more meetings than one might expect. Communication is key for them, as they stay in constant contact with their management team, chefs, and food and beverage director. This ongoing dialogue allows them to address any issues and make adjustments as needed, keeping them flexible and ready to adapt at a moment’s notice.

MORNING ROUTINE

After a quick coffee, the day truly begins with a flurry of emails and phone calls. Living near Hays City Store in Driftwood means the Tindols head there first. 

Known for its scratch-made dishes, Hays City Store is a Hill Country gem that serves up fan favorites like locally sourced burgers, hand-battered chicken-fried steaks, and hand-cut onion rings. The outdoor beer garden, shaded by majestic oak trees, offers a relaxed atmosphere where guests can enjoy live music, fire pits, and games. The new addition of a one-of-a-kind kid bouncy tree net makes it a beloved spot for both locals and visitors. 

FINE DINING

But their work doesn’t end there. Just a short drive away in downtown Buda, the Tindols’ second restaurant, Taste on Main, presents a different, yet equally inviting, dining experience. 

Housed in a historic 100-year-old building, Taste on Main focuses on classic steakhouse fare and premium seafood dishes. The elegant setting is perfect for a special night out, where guests can indulge in seasonal creations and explore a well-curated selection of craft cocktails, wines, and bourbons. This dual focus on comfort food at Hays City Store and refined dining at Taste on Main showcases the Tindols’ versatility and passion for delivering exceptional culinary experiences.

PLANNING AHEAD

Despite their best efforts to plan the day ahead, the Tindols know that something unexpected often crops up. “We really don’t have, nor can we have, a set schedule or daily agenda,” they explain. Whether it’s a last-minute issue communicated to managerial staff or an urgent need for supplies, Travis and Tamara are always prepared to pivot. Their flexibility is what keeps the restaurants running smoothly, even when things don’t go according to plan.

JUGGLING A DUAL DINING EXPERIENCE

A key to their success is the strong team of managers and chefs they’ve assembled at both Hays City Store and Taste on Main. These teams handle much of the daily operational tasks, from food and drink specials to staff scheduling, allowing Travis and Tamara to focus on the bigger picture. They actively support their teams by running a myriad of errands—becoming regulars at H-E-B, Costco, and Ace Mart Restaurant Supply—to ensure the restaurants have everything they need.

ENSURING EXCELLENCE

At least once a week, the Tindols conduct a “restaurant walk” with an available manager or chef. During this walk, they assess the status of the restaurant, checking that the environment is clean, uncluttered, and ready to provide guests with the best possible experience. This attention to detail and commitment to maintaining high standards are what set their restaurants apart.

WINDING DOWN

As the day winds down, Travis and Tamra might finally get a moment to catch their breath. But even then, they are thinking ahead, planning for the next day, and ensuring that both Hays City Store and Taste on Main continue to thrive. For the Tindols, this isn’t just a job—it’s a passion. And despite the long hours, the unexpected challenges, and the constant need to adapt, they wouldn’t want it any other way.
